Recipe: vegan and gluten-free brownie

Ingredients (makes 12)

  • 170g gluten-free flour
  • 200g sugar
  • 70g cocoa
  • 1 tsp gluten-free baking powder
  • 1/2 tsp salt
  • 200g blackcurrants, cooked and cooled
  • 160g vegetable oil

Method


  • Cook the blackcurrants until they've broken down. Allow to cool
  • Mix together the flour, sugar, cocoa, baking powder and salt
  • Then add the blackcurrants and oil and mix well 
  • Pour the mixture into a baking dish lined with baking parchment and bake at 180oC for 25 minutes or until a knife poked in the middle comes out dry
