Recipe: Tofu & Walnut Balls

These tasty morsels can be a starter or a main course - and they are vegan too!

Ingredients

1 onion, finely diced

1 garlic clove, crushed                    

2 tbsp olive oil    

65g walnuts, crushed  

45g rolled oats

120g ground almonds

1 tsp bouillon or 1 vegetable stock cube

2 tbsp fresh basil, finely chopped

1 tbsp fresh rosemary, finely chopped

Up to 125ml water (depending on moisture content of tofu)       

2 tbsp tamari or soy sauce    

250g block firm tofu                       

4-6 tbsp sesame seeds

Making this dish

Fry the chopped onions and garlic in olive oil until soft.

Place walnuts in a bowl with rolled oats, ground almonds, bouillon, basil and rosemary.

In a separate bowl, mash the water, tamari and tofu. Add to the other ingredients and mix well until it binds together.

Take small amounts and roll into 3cm balls. Roll them in sesame seeds until well coated.

Place on an oiled baking sheet and bake for 20-30 minutes at 190oC/gas mark 5. Serve hot or cold as a main course or a starter.

SHAPE ALTERNATIVE: you can make these into sausages rather than spheres!
