Recipe: Salad dressings for summer

From The Barn's forthcoming cookbook

These dressings are perfect for putting over fresh salads - and they can all be made vegan as well.

 

Fresh herb dressing

2 tbsp olive oil

1 tbsp balsamic vinegar

1 clove garlic, crushed

2 tsp assorted fresh herbs (mint, oregano, basil, coriander), finely chopped

Put all ingredients in a jar and shake until well
blended.


Hollyhock dressing

80ml water

80ml tamari or soy sauce

80ml balsamic or apple cider vinegar

60g nutritional yeast

240ml olive oil

1 small clove of garlic (optional)

Blend all ingredients together until smooth.

Herb & Yoghurt salad dressing

1 tsp fresh mint, chopped

1 tsp fresh basil, chopped

1 clove garlic, crushed

125ml dairy or soy yoghurt

Combine all ingredients together until smooth.
