Recipe: Salad dressings for summer

These dressings are perfect for putting over fresh salads - and they can all be made vegan as well.
Fresh herb dressing
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 clove garlic, crushed
- 2 tsp assorted fresh herbs (mint, oregano, basil, coriander), finely chopped
Put all ingredients in a jar and shake until well
blended.
Hollyhock dressing
- 80ml water
- 80ml tamari or soy sauce
- 80ml balsamic or apple cider vinegar
- 60g nutritional yeast
- 240ml olive oil
- 1 small clove of garlic (optional)
- Blend all ingredients together until smooth.
- Herb & Yoghurt salad dressing
- 1 tsp fresh mint, chopped
- 1 tsp fresh basil, chopped
- 1 clove garlic, crushed
- 125ml dairy or soy yoghurt
Combine all ingredients together until smooth.
